Good pork can be hard to find in Delhi. Many neighbourhood shops don't stock it, quality varies, and it's not always clear how the meat was stored. This guide covers what to check before you buy, which cut to choose for what you're cooking, and how to get pork delivered across Delhi NCR.
What to look for when buying pork
- Cold chain. Pork should stay frozen or chilled from the supplier to your kitchen. Frozen pork that has thawed and been refrozen loses texture and is a food-safety risk.
- Vacuum sealing. A sealed pack keeps air out, which stops freezer burn and keeps the meat in good condition for longer.
- A named cut and weight. "Pork, 1 kg" tells you nothing. You want to know if it's belly, shoulder, loin or ribs, with and without bone or skin.
- Where it comes from. A supplier should be able to tell you the origin. Fresh'N Frozen's pork cuts are from Belgium.
- Who else buys from them. Fresh'N Frozen has supplied India's top hospitality names since 1995, and home cooks now order the same products online.
Which pork cut should I buy?
- Pork belly (skinless block): rich, layered fat and meat. Best slow-cooked: pork curry, vindaloo, braised pork, or pressure-cooked and then crisped in a pan.
- Pork shoulder (boneless): well marbled and forgiving. The cut for pulled pork, stews and curries.
- Baby back ribs: for barbecue, or our pressure-cooker Goan-spiced ribs.
- Pork chops (bone-in): quick to pan-sear or grill.
- Pork tenderloin: the leanest cut. Roast whole or slice into medallions.
Ready-to-eat and quick pork
If you want pork without the cooking, there's smoked bacon, ham and salami, and gourmet pork sausages such as bratwurst, bangers and chorizo. Not sure which salami to pick? Read our salami guide.
How to store and thaw frozen pork
- Keep it in the freezer, in its sealed pack, until the day before you cook.
- Thaw overnight in the fridge on a plate. A 500 g block usually takes about a day.
- In a hurry, thaw the sealed pack in a bowl of cold water, changing the water every 30 minutes.
- Don't thaw pork on the counter or in hot water, and cook it within a day of thawing.
- Cook pork until the juices run clear. Chops and roasts should reach 63°C at the centre and rest for a few minutes; minced pork and sausages need 72°C.
